Unlike this gingerbread instant film camera, imitation crab meat requires quite a bit of technology to make into the sticks you see at supermarkets worldwide. These machines basically blend processed fish, called surimi, with various texturizing ingredients, flavorants, and colorants.
Surimi is mainly composed of fish myofibrillar proteins, or the ones that make it possible to form a sturdy gel. This gel is then be shaped and cut by dedicated machines into thin strips which, when rolled together, mimic the texture of real crab meat. Not only are special machines required for the manufacturing imitation crab meat, but also the packaging, which mechanically vacuum pack the food in thermoformed trays.
